Honey Coffee Processing
The honey process is a unique method that blends characteristics of both washed and natural processing. It is particularly popular in Costa Rica and other Central American regions. This method allows producers to experiment with different levels of mucilage left on the beans, creating a range of flavor profiles that balance sweetness, acidity, and body.
The Process
Harvesting: Ripe cherries are carefully handpicked.
Pulping: The outer skin is removed, but a portion of the mucilage (or “honey”) is left on the beans.
Drying: Beans are dried with varying amounts of mucilage intact, categorized as white, yellow, red, or black honey.
Hulling: Once dried, the parchment layer is removed.
Flavor Profile
Balanced sweetness with mild acidity
Smooth and syrupy body
Notes of caramel, fruit, and floral undertones
Honey Process Classifications
White Honey: Minimal mucilage left on the beans, producing a cleaner profile with crisp acidity.
Yellow Honey: Slightly more mucilage retained, resulting in balanced sweetness and acidity.
Red Honey: A larger amount of mucilage is left, intensifying sweetness and body.
Black Honey: The most mucilage is retained, creating deep fruit-forward notes with a heavy body.
Advantages & Challenges
Advantages: Allows for a wide variety of flavor profiles and can reduce water consumption compared to the washed process.
Challenges: Requires precise drying techniques to avoid fermentation issues or inconsistent cup quality.
