Full-Washed Coffee Processing
The full-washed process, also known as the “wet process,” is one of the most popular coffee processing methods worldwide. It is widely used in Central America and Africa to produce clean and bright coffee flavors. This method is preferred by specialty coffee producers who aim for consistency and clarity in their coffee profiles.
The Process
Harvesting: Only fully ripe cherries are handpicked.
Depulping: The outer cherry skin is removed, leaving the beans covered in mucilage.
Fermentation: Beans are soaked in water tanks for 12-48 hours to break down the mucilage completely.
Washing: The fermented beans are thoroughly washed to remove all remaining mucilage.
Drying: Beans are dried on raised beds or patios to the desired moisture level.
