Natural (Dry) Coffee Processing
The natural process, or “dry process,” is the oldest method of coffee processing, known for producing bold and fruity coffee flavors. It is ideal for regions with long, dry seasons where water usage needs to be minimized. This method allows the coffee beans to absorb sugars from the fruit, resulting in a sweeter and more complex profile.
The Process
Harvesting: Only ripe cherries are carefully selected.
Drying: Whole cherries are spread out under the sun on patios or raised beds.
Turning & Monitoring: The cherries are regularly turned to ensure even drying.
Hulling: Once dried, the beans are mechanically separated from the dried fruit and parchment.
