Semi-Washed Coffee (Wet-Hulled) Processing
The semi-washed process, also known as the “wet-hulled” or “Giling Basah” method, is commonly used in Indonesia and some other coffee-producing regions. This unique processing technique significantly influences the final flavor profile of coffee beans and is deeply rooted in the traditional coffee culture of Indonesia. Farmers and producers favor this method due to its efficiency in humid environments where drying coffee beans fully can be challenging.
The Process
Harvesting: Ripe coffee cherries are selectively picked to ensure quality.
Pulping: The outer skin of the cherries is removed, but some mucilage remains attached to the beans.
Short Fermentation: The beans undergo a brief fermentation period to break down the remaining mucilage.
Partial Washing: The mucilage is partially washed off, but some remains on the beans.
Drying: The beans are dried to a certain moisture level before the parchment layer is removed.
